• 1/3 cup Seggiano Extra Virgin Olive Oil
  • 3 tbsps fresh lemon juice
  • 1 tbsp shallots
  • 2 tsps dijon mustard
  • 2 tsps honey
  • cracked black pepper
  • sea salt
  • 5 cups orzo pasta
  • 2 cups english cucumber
  • 2 cups cherry tomatoes
  • 1 cup feta cheese crumbles
  • 1/2 cup onion
  • 1/3 cup fresh basil
  • Cracked black pepper, sea salt


  1. In a medium mason jar combine olive oil, lemon juice, shallots, mustard, honey, and a pinch of salt a fresh cracked black pepper. Secure the lid tightly and shake vigorously until emulsified.
  2. Taste and season with more lemon, honey, salt, or pepper as necessary. Set aside.
  3. In a large bowl toss together orzo pasta, cucumber, tomatoes, feta cheese, onion, and fresh basil. Season lightly with salt and pepper. Just before serving, drizzle in the dressing.
  4. Taste and season accordingly. Serve immediately.
