Black Bean, Lentil and Mango Salad

Ingredients:

  • 1/2 cup mango, chopped
  • 1 cup black beans, canned; rinsed and drained
  • 1/2 cup red bell pepper
  • 1/2 cup lentils, prepared
  • 1 cup jalapeno pepper, seeded and chopped fine
  • 1/4 cup red onion, chopped fine
  • 2 tablespoons fresh cilantro, chopped fine
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1/2 teaspoon sea salt
  • 2 tablespoons Lucini Premium Select Extra Virgin Olive Oil

Directions:

  1. Mix ingredients well in serving bowl.
  2. Chill for 20 minutes and then bring to room temperature for 10 minutes before serving.
