Black Bean, Lentil and Mango Salad
- 1/2 cup mango, chopped
- 1 cup black beans, canned; rinsed and drained
- 1/2 cup red bell pepper
- 1/2 cup lentils, prepared
- 1 cup jalapeno pepper, seeded and chopped fine
- 1/4 cup red onion, chopped fine
- 2 tablespoons fresh cilantro, chopped fine
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 1/2 teaspoon sea salt
- 2 tablespoons Lucini Premium Select Extra Virgin Olive Oil
- Mix ingredients well in serving bowl.
- Chill for 20 minutes and then bring to room temperature for 10 minutes before serving.
